METHOD
Step 1.
Preheat your oven to 170°C (150°C fan) and line a baking tray with parchment paper.Step 2.
In a mixing bowl, combine ground almonds, caster sugar, and a pinch of salt.Step 3.
In a separate bowl, whisk the egg whites to soft peaks, then gradually add the granulated sugar until stiff peaks form.Step 4.
Fold the egg white mixture into the almond mixture, adding almond extract for flavour. Stir until well combined.Step 5.
Using a teaspoon, drop heaping amounts of the mixture onto the prepared tray, leaving space between each biscuit.Step 6.
Sprinkle the top of each biscuit lightly with caster sugar before baking.Step 7.
Bake in the preheated oven for 15-20 minutes or until they are golden and firm to the touch.Step 8.
Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
