Classic Amaretti Biscuits Sprinkled with Sugar Recipe

METHOD

  • Step 1.

    Preheat your oven to 170°C (150°C fan) and line a baking tray with parchment paper.
  • Step 2.

    In a mixing bowl, combine ground almonds, caster sugar, and a pinch of salt.
  • Step 3.

    In a separate bowl, whisk the egg whites to soft peaks, then gradually add the granulated sugar until stiff peaks form.
  • Step 4.

    Fold the egg white mixture into the almond mixture, adding almond extract for flavour. Stir until well combined.
  • Step 5.

    Using a teaspoon, drop heaping amounts of the mixture onto the prepared tray, leaving space between each biscuit.
  • Step 6.

    Sprinkle the top of each biscuit lightly with caster sugar before baking.
  • Step 7.

    Bake in the preheated oven for 15-20 minutes or until they are golden and firm to the touch.
  • Step 8.

    Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
