Dark Chocolate & Blackberry Cupcakes Recipe

Delicious and rich dark chocolate and blackberry cupcakes, topped with sweet and creamy vanilla buttercream.

METHOD

  • Step 1.

    Preheat the oven to 180°C and line a muffin tin with paper cases.
  • Step 2.

    In a large bowl, combine the flour, sugar, cocoa, baking powder, and salt.
  • Step 3.

    Add in the eggs, milk, oil, and vanilla essence. Mix until smooth.
  • Step 4.

    Mix in the blackberry purée, then divide the batter evenly between the cases.
  • Step 5.

    Bake for approximately 20 minutes or until a toothpick inserted comes out clean.
  • Step 6.

    While the cupcakes are cooling, prepare the buttercream by beating together the butter, sugar, vanilla essence, and milk until smooth.
  • Step 7.

    Once the cupcakes are cooled, pipe or spread the buttercream frosting on top.
  • Step 8.

    Top with a few fresh blackberries and serve.

  10. 50 gBlackberries, mashed into a purée

  11. 200 gButter, for the frosting

  12. 400 gIcing sugar, for the frosting

  13. 2 tspVanilla essence, for the frosting

  14. 50 mlMilk, for the frosting

  15. 100 gBlackberries, for decoration
