METHOD
Step 1.
Start by preheating your oven to 150°C (300°F) and lining two baking sheets with parchment paper.Step 2.
In a food processor, blend together the icing sugar and ground almonds. Sift the mixture into a large bowl, discarding any larger lumps.Step 3.
In a separate bowl, whisk the egg whites until they form soft peaks. Gradually add the caster sugar, continuing to whisk until the mixture is glossy.Step 4.
Gently fold the almond and icing sugar mixture into the egg whites until combined. Add red food colouring to achieve a deep pink shade.Step 5.
Spoon the mixture into a piping bag, armed with a round nozzle. Pipe round mounds onto your lined baking sheets. Tap the sheets to release any air bubbles and leave to sit for 20-30 minutes.Step 6.
Bake for about 15 minutes until crisp. Remove from the oven and leave to cool completely.Step 7.
While the macarons are cooling, prepare the filling. Heat the strawberries and sugar in a saucepan over a low heat until the mixture turns into a jam-like consistency.Step 8.
Once the macarons are cool, sandwich two together with a layer of the homemade strawberry jam. Repeat with the remaining macarons and jam. Enjoy!
