Strawberry Macarons Recipe

These delightful Strawberry Macarons with jam filling are a perfect treat for afternoon tea or a special occasion. With vibrant berry flavour and luscious jam filling, these bite-sized morsels will be a hit!

METHOD

  • Step 1.

    Start by preheating your oven to 150°C (300°F) and lining two baking sheets with parchment paper.
  • Step 2.

    In a food processor, blend together the icing sugar and ground almonds. Sift the mixture into a large bowl, discarding any larger lumps.
  • Step 3.

    In a separate bowl, whisk the egg whites until they form soft peaks. Gradually add the caster sugar, continuing to whisk until the mixture is glossy.
  • Step 4.

    Gently fold the almond and icing sugar mixture into the egg whites until combined. Add red food colouring to achieve a deep pink shade.
  • Step 5.

    Spoon the mixture into a piping bag, armed with a round nozzle. Pipe round mounds onto your lined baking sheets. Tap the sheets to release any air bubbles and leave to sit for 20-30 minutes.
  • Step 6.

    Bake for about 15 minutes until crisp. Remove from the oven and leave to cool completely.
  • Step 7.

    While the macarons are cooling, prepare the filling. Heat the strawberries and sugar in a saucepan over a low heat until the mixture turns into a jam-like consistency.
  • Step 8.

    Once the macarons are cool, sandwich two together with a layer of the homemade strawberry jam. Repeat with the remaining macarons and jam. Enjoy!
