METHOD

  • Step 1.

    Dissolve the yeast in warm milk and let it stand for 10 minutes.
  • Step 2.

    Mix flour, sugar, and salt in a bowl. Make a well in the mix, then add the yeast mixture, egg yolks, and vanilla extract.
  • Step 3.

    Knead until dough is smooth and elastic, about 10 minutes.
  • Step 4.

    Gradually add butter, kneading to incorporate.
  • Step 5.

    Add mixed peel, sultanas, and chopped almonds.
  • Step 6.

    Place the dough in a greased bowl, cover with cling film and let rise in a warm area until doubled in size, about 2 hours.
  • Step 7.

    Move the dough to a floured surface, divide into two pieces and shape each into a ball. Let rest for 15 minutes.
  • Step 8.

    Place each ball of dough in a baking-paper ring and let rise in a warm area until doubled in size, about 2 hours.
  • Step 9.

    Preheat oven to 375°F (190°C). Brush the loaves with egg wash. Bake until golden, about 40 minutes.

    Let the loaves cool before slicing.
