METHOD
Step 1.
Preheat your oven to 375°F (190°C).Step 2.
Roll out the pie dough and fit it into a 9-inch pie plate. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans.Step 3.
Bake the crust in the preheated oven for 15 minutes. Carefully remove the weights and parchment and bake for another 5 minutes, or until lightly golden. Remove from the oven and set aside.Step 4.
In a skillet, cook the bacon until crispy. Remove from the skillet and drain on paper towels.Step 5.
In a large bowl, whisk together the eggs, cream, salt, pepper, and nutmeg. Stir in the cheese and cooked bacon.Step 6.
Pour the egg mixture into the pre-baked crust. Bake for 35-40 minutes, or until the quiche is set and lightly golden on top.Step 7.
