METHOD

  • Step 1.

    Preheat your oven to 375°F (190°C).
  • Step 2.

    Roll out the pie dough and fit it into a 9-inch pie plate. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans.
  • Step 3.

    Bake the crust in the preheated oven for 15 minutes. Carefully remove the weights and parchment and bake for another 5 minutes, or until lightly golden. Remove from the oven and set aside.
  • Step 4.

    In a skillet, cook the bacon until crispy. Remove from the skillet and drain on paper towels.
  • Step 5.

    In a large bowl, whisk together the eggs, cream, salt, pepper, and nutmeg. Stir in the cheese and cooked bacon.
  • Step 6.

    Pour the egg mixture into the pre-baked crust. Bake for 35-40 minutes, or until the quiche is set and lightly golden on top.
  • Step 7.

    Allow the quiche to cool for a few minutes before slicing and serving.
