Cherry & Coconut Pancakes Recipe
A delightful sweet treat perfect for breakfast or dessert. Fluffy pancakes served with tart cherries, a dollop of sweet cherry jam, and a dusting of desiccated coconut.

METHOD
Step 1.
In a large bowl, combine the flour, baking powder, salt, sugar, and desiccated coconut.Step 2.
In another bowl, whisk together the egg and milk. Gradually add the liquid ingredients to the dry ingredients, stirring until just combined.Step 3.
Heat a lightly greased nonstick skillet over medium heat. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.Step 4.
Serve the pancakes stacked, topped with the cherries, cherry jam, a sprinkle of desiccated coconut and a mint leaf for garnish.
