Cherry & Coconut Pancakes Recipe

A delightful sweet treat perfect for breakfast or dessert. Fluffy pancakes served with tart cherries, a dollop of sweet cherry jam, and a dusting of desiccated coconut.

METHOD

  • Step 1.

    In a large bowl, combine the flour, baking powder, salt, sugar, and desiccated coconut.
  • Step 2.

    In another bowl, whisk together the egg and milk. Gradually add the liquid ingredients to the dry ingredients, stirring until just combined.
  • Step 3.

    Heat a lightly greased nonstick skillet over medium heat. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
  • Step 4.

    Serve the pancakes stacked, topped with the cherries, cherry jam, a sprinkle of desiccated coconut and a mint leaf for garnish.
