METHOD
Step 1.
Combine the milk, cream, and half of the sugar in a medium saucepan over medium heat. Cook until the sugar dissolves and the mixture just begins to simmer.Step 2.
In a separate bowl, whisk together the egg yolks and the rest of the sugar until the mixture becomes thick and pale.Step 3.
Gradually temper the egg mixture by slowly adding the hot milk mixture, whisking constantly to prevent the eggs from scrambling.Step 4.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon.Step 5.
Remove from heat and stir in the vanilla extract.Step 6.
Sieve the mixture into a clean bowl and cool to room temperature. Cover and refrigerate until thoroughly chilled, about 2 hours.Step 7.
Transfer the custard into an ice cream maker and churn according to the manufacturer's instructions.Step 8.
