METHOD

  • Step 1.

    Combine the milk, cream, and half of the sugar in a medium saucepan over medium heat. Cook until the sugar dissolves and the mixture just begins to simmer.
  • Step 2.

    In a separate bowl, whisk together the egg yolks and the rest of the sugar until the mixture becomes thick and pale.
  • Step 3.

    Gradually temper the egg mixture by slowly adding the hot milk mixture, whisking constantly to prevent the eggs from scrambling.
  • Step 4.

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon.
  • Step 5.

    Remove from heat and stir in the vanilla extract.
  • Step 6.

    Sieve the mixture into a clean bowl and cool to room temperature. Cover and refrigerate until thoroughly chilled, about 2 hours.

    Transfer the custard into an ice cream maker and churn according to the manufacturer's instructions.

    Once churned, transfer the gelato to a freezer-safe container and freeze until firm.
