Traditional Bubble & Squeak Recipe

This is a recipe for traditional Bubble & Squeak, a classic British dish made from boiled potatoes and cabbage, perfect for using up leftover veggies.

METHOD

  • Step 1.

    Cook the potatoes in a pan of boiling water until tender. Drain and leave to steam-dry, then mash.
  • Step 2.

    Heat 1 tbsp oil in a non-stick frying pan, then fry the onion until soft. Add the cabbage and cook until tender.
  • Step 3.

    Mix together the mashed potato, cabbage and onion. Season to taste with salt and pepper.
  • Step 4.

    Flatten the mixture into the pan, then cook over a medium heat until crispy and golden. Flip over and cook the other side until golden.
  • Step 5.

    Serve hot for a hearty brunch.
