Traditional Bubble & Squeak Recipe
This is a recipe for traditional Bubble & Squeak, a classic British dish made from boiled potatoes and cabbage, perfect for using up leftover veggies.

METHOD
Step 1.
Cook the potatoes in a pan of boiling water until tender. Drain and leave to steam-dry, then mash.Step 2.
Heat 1 tbsp oil in a non-stick frying pan, then fry the onion until soft. Add the cabbage and cook until tender.Step 3.
Mix together the mashed potato, cabbage and onion. Season to taste with salt and pepper.Step 4.
Flatten the mixture into the pan, then cook over a medium heat until crispy and golden. Flip over and cook the other side until golden.Step 5.
Serve hot for a hearty brunch.
