METHOD

  • Step 1.

    Preheat the oven to 200°C/gas 6.
  • Step 2.

    Cut the new potatoes in half and place in a baking tray. Sprinkle with thyme, salt, pepper and drizzle with olive oil. Toss the potatoes until they are well coated. Roast for up to 1 hour or until they are golden and crispy.
  • Step 3.

    While the potatoes are roasting, prepare the sour cream and chive dip. Blend the sour cream, finely chopped chives, minced garlic, and a pinch of salt and pepper in a bowl until well mixed. Refrigerate until serving.
  • Step 4.

    Serve the crispy herby potatoes with the refrigerated dip and a handful of salad.
