METHOD
Step 1.
Preheat the oven to 200°C/gas 6.Step 2.
Cut the new potatoes in half and place in a baking tray. Sprinkle with thyme, salt, pepper and drizzle with olive oil. Toss the potatoes until they are well coated. Roast for up to 1 hour or until they are golden and crispy.Step 3.
While the potatoes are roasting, prepare the sour cream and chive dip. Blend the sour cream, finely chopped chives, minced garlic, and a pinch of salt and pepper in a bowl until well mixed. Refrigerate until serving.Step 4.
Serve the crispy herby potatoes with the refrigerated dip and a handful of salad.
