Courgette Salad with Melon, Pomegranate & Walnuts Recipe
A light and refreshing appetiser perfect for a summer afternoon, combining the earthy taste of courgette with a sweet burst of melon and pomegranate, paired with the crunch of walnuts.

METHOD
Step 1.
Wash and peel the courgette into ribbons using a vegetable peeler.Step 2.
Slice the melon into thin slices. Discard the seeds and rind.Step 3.
Pit the pomegranate and extract the seeds.Step 4.
Roughly chop the walnuts and toast them lightly in a pan.Step 5.
Core and slice the apple into thin slices.Step 6.
Arrange the courgette ribbons, melon slices, apple slices and pomegranate seeds on a plate. Add a squeeze of lemon.Step 7.
Scatter the toasted walnuts on top.Step 8.
Serve immediately, adding a sprinkle of sea salt and pepper to taste and a drizzle of olive oil, if desired.
