Courgette Salad with Melon, Pomegranate & Walnuts Recipe

A light and refreshing appetiser perfect for a summer afternoon, combining the earthy taste of courgette with a sweet burst of melon and pomegranate, paired with the crunch of walnuts.

METHOD

  • Step 1.

    Wash and peel the courgette into ribbons using a vegetable peeler.
  • Step 2.

    Slice the melon into thin slices. Discard the seeds and rind.
  • Step 3.

    Pit the pomegranate and extract the seeds.
  • Step 4.

    Roughly chop the walnuts and toast them lightly in a pan.
  • Step 5.

    Core and slice the apple into thin slices.
  • Step 6.

    Arrange the courgette ribbons, melon slices, apple slices and pomegranate seeds on a plate. Add a squeeze of lemon.
  • Step 7.

    Scatter the toasted walnuts on top.
  • Step 8.

    Serve immediately, adding a sprinkle of sea salt and pepper to taste and a drizzle of olive oil, if desired.
