METHOD
Step 1.
Preheat oven to 325 F (165 C).Step 2.
On the stove top, melt the sugar until golden brown and carefully pour the caramel into six ramekins.Step 3.
In a bowl, whisk together the eggs, evaporated milk, condensed milk and vanilla extract. Strain this mixture, then pour it over the caramel in the ramekins.Step 4.
Place ramekins in a bain-marie and bake 1 hour or until the custard is set.Step 5.
Allow to cool. Then refrigerate for at least an hour before serving. To serve, run a knife around the edges of the mould and turn the ramekin upside down onto a plate.
