METHOD
Step 1.
Whisk together the flour, baking powder, and salt in a mixing bowl.Step 2.
In another bowl, beat the egg and then mix in the milk and melted butter. Combine this with the dry ingredients to form a smooth batter.Step 3.
Heat a non-stick frying pan over medium heat and spoon in small amounts of batter to form mini pancakes, cooking for about 1-2 minutes each side until golden brown.Step 4.
Allow the pancakes to cool slightly on a wire rack.Step 5.
Spread each mini pancake with a layer of cream cheese.Step 6.
