METHOD
Step 1.
Preheat oven to 200°C.Step 2.
Peel and chop the potatoes into even-sized chunks, boil in salted water until tender.Step 3.
While potatoes are boiling, melt butter in a saucepan, add flour stirring for 1-2 mins. Gradually whisk in the milk, cook until the mixture thickens.Step 4.
Into the sauce, stir in mustard, cheese, and season with salt and pepper. Then gently fold in the fish.Step 5.
Drain the potatoes, mash with milk, butter, season with salt and nutmeg.Step 6.
Spoon the fish mixture into a baking dish, top with mashed potato, and rake the surface with a fork.Step 7.
Bake for 35-40 mins until golden.Step 8.
Let it stand for a few minutes before serving alongside some seasonal greens.
