METHOD
Step 1.
Gut and clean the sprats thoroughly and pat them dry with a clean kitchen towel.Step 2.
Lay the sprats out on a wire rack ensuring they do not overlap.Step 3.
Sprinkle salt generously over the sprats.Step 4.
Leave the sprats in a sunny, dry, well-ventilated spot for about two days until they dry up and their flesh becomes firm.Step 5.
When dried, store the sprats in an airtight container in a cool, dry place. They can be eaten as is or cooked in dishes for extra flavour.
