METHOD
Step 1.
In a large pot, heat the butter until melted, then add the chopped asparagus, onions and garlic. Sauté until onions are translucent.Step 2.
Add in the vegetable stock and bring to boil. Lower the heat, cover the pot and allow to simmer for 15 minutes or until the asparagus are tender.Step 3.
Using a hand blender or food processor, blend the soup until smooth.Step 4.
Return the soup to the pot, then stir in the cream, dill, chives, lemon zest and juice. Season with salt and pepper to taste.Step 5.
Serve hot in bowls, garnished with extra chives and a swirl of cream if desired.
