Creamy Asparagus Soup Recipe

METHOD

  • Step 1.

    In a large pot, heat the butter until melted, then add the chopped asparagus, onions and garlic. Sauté until onions are translucent.
  • Step 2.

    Add in the vegetable stock and bring to boil. Lower the heat, cover the pot and allow to simmer for 15 minutes or until the asparagus are tender.
  • Step 3.

    Using a hand blender or food processor, blend the soup until smooth.
  • Step 4.

    Return the soup to the pot, then stir in the cream, dill, chives, lemon zest and juice. Season with salt and pepper to taste.
  • Step 5.

    Serve hot in bowls, garnished with extra chives and a swirl of cream if desired.
