Cucumber and Basil Gazpacho Recipe
A refreshing and healthy summer soup, no cooking required. This gazpacho is full of fresh cucumber and aromatic basil.

METHOD
Step 1.
Combine chopped cucumber, basil leaves, chopped garlic, and vegetable broth in a food processor or high-powered blender.Step 2.
Blend until mixture is pureed and reaches desired consistency. For a smoother gazpacho, process for longer.Step 3.
Add olive oil, vinegar, salt, and pepper. Pulse until these ingredients are well integrated into the soup.Step 4.
Chill the soup for at least 2 hours, or until it is cold. This can be done overnight.Step 5.
Serve the soup chilled, garnished with fresh basil leaves.
