Cucumber and Basil Gazpacho Recipe

A refreshing and healthy summer soup, no cooking required. This gazpacho is full of fresh cucumber and aromatic basil.

METHOD

  • Step 1.

    Combine chopped cucumber, basil leaves, chopped garlic, and vegetable broth in a food processor or high-powered blender.
  • Step 2.

    Blend until mixture is pureed and reaches desired consistency. For a smoother gazpacho, process for longer.
  • Step 3.

    Add olive oil, vinegar, salt, and pepper. Pulse until these ingredients are well integrated into the soup.
  • Step 4.

    Chill the soup for at least 2 hours, or until it is cold. This can be done overnight.
  • Step 5.

    Serve the soup chilled, garnished with fresh basil leaves.
