METHOD
Step 1.
Begin by heating a large pot over medium heat. Add the butter until melted. Stir in the chopped onion, celery, and carrot. Cook until they are softened, about 5 minutes.Step 2.
Add the garlic to the pot and cook for another minute until fragrant.Step 3.
Stir in the tomato purée and flour to the vegetables, cook for 2 minutes.Step 4.
Gradually pour in the white wine, scraping any bits off the bottom of the pot. Allow to reduce slightly, about 3 minutes.Step 5.
Add the seafood stock, bay leaves, thyme, and lobster shells. Bring to a simmer and cook, uncovered, for 1 hour.Step 6.
Strain the broth through a fine mesh sieve into a separate pot, pressing on the solids to extract as much liquid as possible. Discard the solids.Step 7.
Return the pot to a low heat and stir in the cream, paprika, and cayenne pepper. Cook for 5 minutes.Step 8.
Chop the lobster meat and add it to the soup, cooking just until heated through, about 5 minutes.Step 9.
Season to taste with salt and pepper. Serve hot, garnished with fresh parsley if desired.

1.5 lSeafood stock
2 Bay leaves
3 Thyme sprigs
2 Lobster shells, broken into large pieces
120 mlDouble cream
1 tspPaprika
0.25 tspCayenne pepper
150 gCooked lobster meat, roughly chopped
1 tspSalt and pepper
2 tbspFresh parsley, chopped, for garnish
