Creamy Pistachio Ice Cream Recipe

METHOD

  • Step 1.

    Soak the pistachios in water overnight then drain and blend until finely ground.
  • Step 2.

    In a saucepan, combine heavy cream, milk, sugar and blended pistachios then simmer on low heat for 30 minutes.
  • Step 3.

    In a separate bowl, whisk egg yolks. Then slowly add a cup of the simmering pistachio-cream mixture to the egg yolks, whisking continuously.
  • Step 4.

    Pour the egg yolk mixture back to the saucepan and continue simmering until the mixture becomes custardy.
  • Step 5.

    Strain the mixture removing bigger pistachio chunks and let it cool.
  • Step 6.

    Once cooled, churn the mixture in an ice cream machine according to the manufacturer's instructions.
  • Step 7.

    Transfer the churned ice cream into a container and freeze for at least 3 hours before serving.
