METHOD
Step 1.
Soak the pistachios in water overnight then drain and blend until finely ground.Step 2.
In a saucepan, combine heavy cream, milk, sugar and blended pistachios then simmer on low heat for 30 minutes.Step 3.
In a separate bowl, whisk egg yolks. Then slowly add a cup of the simmering pistachio-cream mixture to the egg yolks, whisking continuously.Step 4.
Pour the egg yolk mixture back to the saucepan and continue simmering until the mixture becomes custardy.Step 5.
Strain the mixture removing bigger pistachio chunks and let it cool.Step 6.
Once cooled, churn the mixture in an ice cream machine according to the manufacturer's instructions.Step 7.
Transfer the churned ice cream into a container and freeze for at least 3 hours before serving.
