Creamy Porcini Tagliatelle Recipe

METHOD

  • Step 1.

    Soak dried porcini mushrooms in 300ml boiling water for 20 minutes.
  • Step 2.

    In a large saucepan, heat oil over medium heat and sauté sliced shallots and minced garlic.
  • Step 3.

    Add soaked mushrooms, along with their stock into the pan, followed by double cream.
  • Step 4.

    Let the sauce simmer for about 15 minutes until it thickens.
  • Step 5.

    While the sauce is simmering, cook the tagliatelle to al dente in salted boiling water.
  • Step 6.

    Drain the tagliatelle, save some pasta water.
  • Step 7.

    Add cooked tagliatelle to the sauce, if too thick, add a bit of pasta water.
  • Step 8.

    Season with salt, pepper, and freshly grated nutmeg.
  • Step 9.

    Garnish with freshly grated Parmesan cheese and serve warm.
