METHOD
- Step 1.Soak dried porcini mushrooms in 300ml boiling water for 20 minutes.
- Step 2.In a large saucepan, heat oil over medium heat and sauté sliced shallots and minced garlic.
- Step 3.Add soaked mushrooms, along with their stock into the pan, followed by double cream.
- Step 4.Let the sauce simmer for about 15 minutes until it thickens.
- Step 5.While the sauce is simmering, cook the tagliatelle to al dente in salted boiling water.
- Step 6.Drain the tagliatelle, save some pasta water.
- Step 7.Add cooked tagliatelle to the sauce, if too thick, add a bit of pasta water.
- Step 8.Season with salt, pepper, and freshly grated nutmeg.
- Step 9.Garnish with freshly grated Parmesan cheese and serve warm.
