METHOD
Step 1.
Soak dried porcini mushrooms in 300ml boiling water for 20 minutes.Step 2.
In a large saucepan, heat oil over medium heat and sauté sliced shallots and minced garlic.Step 3.
Add soaked mushrooms, along with their stock into the pan, followed by double cream.Step 4.
Let the sauce simmer for about 15 minutes until it thickens.Step 5.
While the sauce is simmering, cook the tagliatelle to al dente in salted boiling water.Step 6.
Drain the tagliatelle, save some pasta water.Step 7.
Add cooked tagliatelle to the sauce, if too thick, add a bit of pasta water.Step 8.
Season with salt, pepper, and freshly grated nutmeg.Step 9.
Garnish with freshly grated Parmesan cheese and serve warm.
