Step 1.
Preheat your oven to 200°C (390°F).Step 2.
In a bowl, mix together 2 tbsp olive oil, 2 tsp chilli powder, 1 tsp garlic powder, salt, and pepper.Step 3.
Rub the spice mix thoroughly onto both sides of 6 chicken thighs.Step 4.
Place the chicken thighs on a baking tray lined with parchment paper, ensuring they're not touching.Step 5.
Bake in the preheated oven for 30 - 35 minutes, or until the skin is crispy and the chicken is cooked through.Step 6.
In the meantime, prepare the sauce by mixing 3 tbsp soy sauce, 1 tbsp honey, 2 minced garlic cloves, 1 tsp grated ginger, and 1 sliced chilli in a small saucepan over low heat. Stir until the honey dissolves.Step 7.
