Green Olives & Sun Dried Tomatoes Penne Pasta Recipe

METHOD

  • Step 1.

    Cook the pasta in a large pot of boiling salted water until tender but still firm. Drain well.
  • Step 2.

    While pasta is cooking, blitz basil leaves, pine nuts, garlic and parmesan in a food processor. Pour in olive oil slowly while mixing.
  • Step 3.

    Mix cooked pasta, pesto, green olives and sun-dried tomatoes in a large bowl until pasta is fully covered with pesto.
  • Step 4.

    Stir through the oregano and gently warm on the hob.
  • Step 5.

    Season with salt and pepper. Serve warm. Garnish with a sprinkle of shaved Parmesan.

  1. 250 gPenne pasta

  2. 2 cupFresh basil leaves

  3. 75 gPine nuts

  4. 2 Garlic cloves

  5. 50 gParmesan cheese, finely grated

  6. 125 mlExtra-virgin olive oil

  7. 12 Green olives

  8. 50 gSun-dried tomatoes

  9. 1 tspSalt

  10. 1 Black pepper

  11. 20 gParmesan for garnish, shaved

  12. 2 tspOregano
