Green Olives & Sun Dried Tomatoes Penne Pasta Recipe

METHOD
Step 1.
Cook the pasta in a large pot of boiling salted water until tender but still firm. Drain well.Step 2.
While pasta is cooking, blitz basil leaves, pine nuts, garlic and parmesan in a food processor. Pour in olive oil slowly while mixing.Step 3.
Mix cooked pasta, pesto, green olives and sun-dried tomatoes in a large bowl until pasta is fully covered with pesto.Step 4.
Stir through the oregano and gently warm on the hob.Step 5.
Season with salt and pepper. Serve warm. Garnish with a sprinkle of shaved Parmesan.

2 Garlic cloves
50 gParmesan cheese, finely grated

12 Green olives

20 gParmesan for garnish, shaved
