METHOD
Step 1.
In a large bowl, marinate chicken pieces with soy sauce, minced garlic, and ground black pepper for at least 30 minutes.Step 2.
Heat a large pot over medium heat and add sesame oil. Once hot, add marinated chicken and brown on all sides.Step 3.
Pour water into the pot until it just covers the chicken. Add the diced potato, carrot, and onion. Stir well.Step 4.
Cover the pot with a lid, bringing the stew to a boil. Once boiling, reduce the heat to a simmer and cook for 20 minutes.Step 5.
Add the gochujang, gochugaru, and soy sauce for seasoning. Mix well until all ingredients are evenly coated with the sauce.Step 6.
Add the spring onions and simmer for an additional 10 minutes, or until the vegetables are tender and the chicken is fully cooked.Step 7.
Adjust the seasoning with sugar and additional soy sauce if needed. Serve hot with steamed rice.
