METHOD

  • Step 1.

    In a large bowl, marinate chicken pieces with soy sauce, minced garlic, and ground black pepper for at least 30 minutes.
  • Step 2.

    Heat a large pot over medium heat and add sesame oil. Once hot, add marinated chicken and brown on all sides.
  • Step 3.

    Pour water into the pot until it just covers the chicken. Add the diced potato, carrot, and onion. Stir well.
  • Step 4.

    Cover the pot with a lid, bringing the stew to a boil. Once boiling, reduce the heat to a simmer and cook for 20 minutes.
  • Step 5.

    Add the gochujang, gochugaru, and soy sauce for seasoning. Mix well until all ingredients are evenly coated with the sauce.
  • Step 6.

    Add the spring onions and simmer for an additional 10 minutes, or until the vegetables are tender and the chicken is fully cooked.
  • Step 7.

    Adjust the seasoning with sugar and additional soy sauce if needed. Serve hot with steamed rice.

  12. 3 Spring onions, chopped

  13. 1 tspSugar

  14. 1 tspSesame seeds, for garnish

  15. 0.5 tspNigella seeds, for garnish
