
Thai Green Chicken Curry Recipe

METHOD
- Step 1.Cut the chicken into bitesize pieces and set aside.
- Step 2.Slice the courgettes and green peppers into small chunks and set aside.
- Step 3.In a large pan, heat 2 tbsp of oil over medium heat.
- Step 4.Add the Thai green curry paste to the pan and stir until fragrant.
- Step 5.Add the chicken into the pan and cook until browned.
- Step 6.Pour in the coconut milk and bring to the boil. Let simmer for 20 minutes.
- Step 7.Add the courgettes, green peppers and peas to the pan and let simmer for 10 minutes or until vegetables are tender.
- Step 8.Taste for seasoning and adjust as needed.
- Step 9.Serve hot with basmati rice. Garnish with slices of fresh red chilli and a drizzle of coconut cream.
