Thai Green Chicken Curry Recipe

METHOD
Step 1.
Cut the chicken into bitesize pieces and set aside.Step 2.
Slice the courgettes and green peppers into small chunks and set aside.Step 3.
In a large pan, heat 2 tbsp of oil over medium heat.Step 4.
Add the Thai green curry paste to the pan and stir until fragrant.Step 5.
Add the chicken into the pan and cook until browned.Step 6.
Pour in the coconut milk and bring to the boil. Let simmer for 20 minutes.Step 7.
Add the courgettes, green peppers and peas to the pan and let simmer for 10 minutes or until vegetables are tender.Step 8.
Taste for seasoning and adjust as needed.Step 9.
Serve hot with basmati rice. Garnish with slices of fresh red chilli and a drizzle of coconut cream.
