Thai Green Chicken Curry Recipe

METHOD

  • Step 1.

    Cut the chicken into bitesize pieces and set aside.
  • Step 2.

    Slice the courgettes and green peppers into small chunks and set aside.
  • Step 3.

    In a large pan, heat 2 tbsp of oil over medium heat.
  • Step 4.

    Add the Thai green curry paste to the pan and stir until fragrant.
  • Step 5.

    Add the chicken into the pan and cook until browned.
  • Step 6.

    Pour in the coconut milk and bring to the boil. Let simmer for 20 minutes.
  • Step 7.

    Add the courgettes, green peppers and peas to the pan and let simmer for 10 minutes or until vegetables are tender.
  • Step 8.

    Taste for seasoning and adjust as needed.
  • Step 9.

    Serve hot with basmati rice. Garnish with slices of fresh red chilli and a drizzle of coconut cream.

  10. 1 tbspCoconut cream
