Dark Chocolate & Pomegranate Pudding Recipe

METHOD
Step 1.
Preheat your oven to 350 degrees. Grease and flour mini cake pans or muffin tins.Step 2.
In a large bowl, combine 150g of flour, 30g of cocoa powder, 1 tsp of baking powder and 0.5 tsp of baking soda. Set aside.Step 3.
In another bowl, melt 150g of dark chocolate and 150g of unsalted butter.Step 4.
Mix 200g of sugar and 3 large eggs to the melted chocolate and butter, stir until smooth.Step 5.
Slowly add the flour mixture to the chocolate mixture and stir until just combined.Step 6.
Divide the batter equally among the prepared pans and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.Step 7.
While the cakes are cooling, prepare the pomegranate glaze by mixing a cup of powdered sugar and 3 tbsp of pomegranate juice until you get a glossy and smooth glaze.Step 8.
Once the cakes are cool, drizzle the glaze over the cakes and let it set. Garnish with pomegranate seeds.
