Luscious Lemon & Blueberry Bundt Cake Recipe

METHOD

  • Step 1.

    Preheat your oven to 175°C. Grease and flour a 9-inch bundt pan.
  • Step 2.

    In a large bowl, combine 250g of plain flour, 1 tsp of baking powder, and 1/2 tsp of salt. Mix well.
  • Step 3.

    In a separate bowl, cream together 200g of caster sugar and 115g of unsalted butter until light and fluffy.
  • Step 4.

    Beat in 3 large eggs, one at a time, then stir in 2 tsp of vanilla extract and zest of 1 lemon.
  • Step 5.

    Gradually blend the dry ingredients into the creamed mixture, alternating with 120ml of milk until completely combined.
  • Step 6.

    Fold in 150g of blueberries. Pour batter into the prepared bundt pan.
  • Step 7.

    Bake for 50 to 60 minutes, or until a toothpick inserted into the centre comes out clean.
  • Step 8.

    Allow to cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely.
  • Step 9.

    For the icing, whisk together 185g of icing sugar, 2 tbsp of lemon juice, and zest of 1 lemon until smooth. Drizzle over the cooled cake.
  • Step 10.

    Serve and enjoy your lemon and blueberry bundt cake!
