Luscious Lemon & Blueberry Bundt Cake Recipe

METHOD
Step 1.
Preheat your oven to 175°C. Grease and flour a 9-inch bundt pan.Step 2.
In a large bowl, combine 250g of plain flour, 1 tsp of baking powder, and 1/2 tsp of salt. Mix well.Step 3.
In a separate bowl, cream together 200g of caster sugar and 115g of unsalted butter until light and fluffy.Step 4.
Beat in 3 large eggs, one at a time, then stir in 2 tsp of vanilla extract and zest of 1 lemon.Step 5.
Gradually blend the dry ingredients into the creamed mixture, alternating with 120ml of milk until completely combined.Step 6.
Fold in 150g of blueberries. Pour batter into the prepared bundt pan.Step 7.
Bake for 50 to 60 minutes, or until a toothpick inserted into the centre comes out clean.Step 8.
Allow to cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely.Step 9.
For the icing, whisk together 185g of icing sugar, 2 tbsp of lemon juice, and zest of 1 lemon until smooth. Drizzle over the cooled cake.Step 10.
