Elderberry Preserve Recipe

  • Step 1.

    Rinse the elderberries, removing any stems or leaves.
  • Step 2.

    In a large pan, combine the elderberries, sugar, and lemon juice.
  • Step 3.

    Over medium heat, bring the mixture to a boil, stirring occasionally.
  • Step 4.

    Once boiling, reduce the heat and simmer for 1 hour or until the mixture has thickened.
  • Step 5.

    Test the preserve by putting a small amount on a chilled plate; it should wrinkle when pushed with a finger.

    Once done, remove from heat and let it cool slightly before transferring into sterilized jars.

    Seal the jars while the preserve is still hot, then allow it to cool completely.

    Store in a cool, dark place and refrigerate once opened.
