Wild Garlic Oil Recipe
This flavourful Wild Garlic Oil is perfect to drizzle over salads, pasta, or just about anything you like. Homemade and easy to make, this recipe brings the beautiful aroma of wild garlic to your dishes.

METHOD
Step 1.
Wash the wild garlic leaves thoroughly and dry them off completely.Step 2.
Gently bash the wild garlic using a pestle and mortar to release the juices. Alternatively you can pulse them in a food processor.Step 3.
Put the crushed wild garlic into a jar that has an airtight seal.Step 4.
Pour the oil into the jar, making sure all the wild garlic is covered.Step 5.
Seal the jar and leave it to infuse for at least 2 weeks. The longer you leave it, the stronger it will taste.Step 6.
Give the jar a shake now and again.Step 7.
After the infusion period, strain the oil into a clean bottle and discard the wild garlic.Step 8.
Use the wild garlic oil within six months.
