Festive Fruit Loaf Recipe

A festive fruit loaf, packed with dried fruits, nuts and warm spices.

METHOD

  • Step 1.

    In a large bowl, soak all the dried fruits in orange juice and brandy overnight.
  • Step 2.

    Preheat the oven to 160C/325F and line a loaf pan with baking paper.
  • Step 3.

    In a separate bowl, mix together flour, baking powder, spices and pinch of salt.
  • Step 4.

    In another bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs, one at a time, followed by the zest and juice of an orange.
  • Step 5.

    Gradually add the flour mixture into the wet ingredients, making sure not to over mix.
  • Step 6.

    Fold in the soaked fruit and chopped nuts.
  • Step 7.

    Pour the mixture into the prepared loaf pan.
  • Step 8.

    Bake for 2 hours, or until a toothpick inserted into the center comes out clean.
  • Step 9.

    Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Step 10.

    Slice and serve.

INGREDIENTS

  1. 500 gDried Fruits (raisins, currants, sultanas, chopped apricots)

  2. 200 mlOrange Juice

  3. 50 mlBrandy

  4. 250 gSelf-raising Flour

  5. 1 tspBaking Powder

  6. 2 tspMixed Spice (all spice)

  7. 1 pinchSalt

  8. 200 gUnsalted Butter, Softened

  9. 150 gBrown Sugar

  10. 4 Eggs

  11. 1 Orange, zest & juice

  12. 100 gChopped Nuts (walnuts, almonds, hazelnuts)
