Flaked Almond Cupcakes Recipe

METHOD
Step 1.
Preheat oven to 180C. Line a cupcake tin with paper liners.Step 2.
In a bowl, combine flour, baking powder and salt. Set aside.Step 3.
In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. Gradually beat in the flour mixture. Fold in the flaked almonds.Step 4.
Fill cupcake liners with the batter and sprinkle over the flaked almonds for topping. Bake for 15-20 minutes or until a wooden pick inserted into a cupcake comes out clean.Step 5.
Let cupcakes cool in the tin for 10 mins then transfer to a wire rack to cool completely.Step 6.
Dust with icing sugar and serve.

2 tspBaking powder
1 tspSalt
200 gButter
200 gSugar
2 Eggs
60 gFlaked almonds
1 tspVanilla extract
20 gFlaked almonds , for topping
1 tbspIcing sugar, for dusting
