Flaked Almond Cupcakes Recipe

METHOD

  • Step 1.

    Preheat oven to 180C. Line a cupcake tin with paper liners.
  • Step 2.

    In a bowl, combine flour, baking powder and salt. Set aside.
  • Step 3.

    In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. Gradually beat in the flour mixture. Fold in the flaked almonds.
  • Step 4.

    Fill cupcake liners with the batter and sprinkle over the flaked almonds for topping. Bake for 15-20 minutes or until a wooden pick inserted into a cupcake comes out clean.
  • Step 5.

    Let cupcakes cool in the tin for 10 mins then transfer to a wire rack to cool completely.
  • Step 6.

    Dust with icing sugar and serve.

  10. 1 tbspIcing sugar, for dusting
