Fresh Clam Spaghetti Recipe

METHOD

  • Step 1.

    Heat oil over medium heat in a large pot. Add garlic and chilli flakes, cook until golden.
  • Step 2.

    Add clams, white wine, and lemon zest. Cover and cook until clams open, about 8-10 minutes.
  • Step 3.

    In a separate pot, cook the spaghetti in salted water until al dente. Drain and reserve 1 cup of pasta water.
  • Step 4.

    Add cooked spaghetti to the pot with clams. Toss well, add some of the reserved pasta water if the mixture is dry.
  • Step 5.

    Stir in parsley before serving. Season with salt and black pepper. Garnish with extra lemon zest, if desired.

  4. 500 gFresh clams, cleaned

  5. 120 mlWhite wine

  6. 1 tbspLemon zest

  7. 200 gSpaghetti

  8. 2 tbspFresh parsley, chopped

  9. 1 tspSalt

  10. 1 tspBlack pepper
