Mussels in White Wine Sauce Recipe

METHOD
Step 1.
Clean the mussels under cold water, removing any beards and discarding any that remain open when tapped.Step 2.
In a large pot, melt butter over medium heat. Add chopped shallots and minced garlic, cooking until softened, about 2 minutes.Step 3.
Pour in white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and let them steam for about 5-7 minutes, until the mussels have opened. Discard any that do not open.Step 4.
Using a slotted spoon, transfer the mussels to a serving dish, leaving the sauce in the pot.Step 5.
Stir fresh cream into the sauce and simmer for 3 minutes. Season with chopped fresh parsley, salt, and pepper to taste.Step 6.
Pour the sauce over the mussels and garnish with additional parsley.Step 7.
