Spicy Potato Salad Recipe
This fresh and zesty potato salad packs a punch with the addition of fresh mint, chives, parsley, red onion, olives and chilli. Great for summer picnics or as a side dish for BBQ's.

METHOD
Step 1.
Place the new potatoes in a large pan of salted water. Bring to the boil, then simmer for 15-20 minutes until tender.Step 2.
While the potatoes are cooking, finely chop the mint, chives, parsley, and red onion. De-seed and finely chop the chilli.Step 3.
In a large mixing bowl, combine the mint, chives, parsley, red onion, chilli and olives.Step 4.
When the potatoes are cooked, drain them and allow to cool slightly. While warm, add them to the mixing bowl with the olive oil and stir well to combine all the ingredients.Step 5.
Season with salt and pepper to taste.Step 6.
The spicy new potato salad can be served warm immediately or refrigerated and served chilled.

50 gMixed pitted olives
1 Fresh chilli
