METHOD
Step 1.
Make your curing mix by combining the brown sugar, salt, ground cloves, and juniper berries.Step 2.
Rub the ham with the curing mix, making sure to cover every spot.Step 3.
Place the ham in a large resealable bag and pour in any remaining curing mix.Step 4.
Seal the bag and place it in the fridge for 5 days, turning the bag over once a day.Step 5.
After 5 days, rinse off the curing mix and dry the ham thoroughly.Step 6.
Smoke the ham over cherry wood, at 225°F (around 107°C) for about 4 hours.Step 7.
Slice thinly and serve the black forest ham as you wish.
