METHOD

  • Step 1.

    Make your curing mix by combining the brown sugar, salt, ground cloves, and juniper berries.
  • Step 2.

    Rub the ham with the curing mix, making sure to cover every spot.
  • Step 3.

    Place the ham in a large resealable bag and pour in any remaining curing mix.
  • Step 4.

    Seal the bag and place it in the fridge for 5 days, turning the bag over once a day.
  • Step 5.

    After 5 days, rinse off the curing mix and dry the ham thoroughly.

    Smoke the ham over cherry wood, at 225°F (around 107°C) for about 4 hours.

    Slice thinly and serve the black forest ham as you wish.
