Goats Cheese and Spinach Quiche Recipe

A delightful quiche that combines the creamy flavour of goats cheese with the natural goodness of spinach, encased in a savory pastry case.

METHOD

  • Step 1.

    Preheat oven to 180C/fan 160C/gas 4.
  • Step 2.

    Roll out the pastry on a light floured surface and use it to line a 20cm flan tin.
  • Step 3.

    Place the pastry in the fridge for 20 minutes to prevent shrinking.
  • Step 4.

    Line the pastry case with baking paper, fill with pastry weights or rice to hold it in place. Bake the pastry case for about 15 minutes then carefully remove the baking paper and weights, cook for a further 5-10 minutes or until the pastry is pale golden.
  • Step 5.

    Meanwhile, heat the oil in a small frying pan, add the onions and fry gently until soft. Add in the spinach and cook down until wilted.
  • Step 6.

    Beat together the eggs and milk in a large jug, season well.
  • Step 7.

    Spoon the onions and spinach into jug with the egg mixture draining out as much liquid as you go. Add in the sliced cheese and mix gently.
  • Step 8.

    Pour the mixture over the bakes pastry crust.
  • Step 9.

    Bake for about 25 to 30 minutes or until the quiche is set and golden brown.
  • Step 10.

    Serve hot or cold.

  2. 2 Red Onions

  3. 100 gGoats Cheese

  4. 200 gSpinach Leaves

  5. 2 Eggs

  6. 100 mlSemi-skimmed Milk

  7. 1 tbspOlive Oil

  8. 1 tspSalt & Pepper
