METHOD

  • Step 1.

    Slice the aubergine into thick circles of about 1 inch thick.
  • Step 2.

    Drizzle with olive oil, season with salt and pepper, and grill on a medium heat for about 15 minutes on each side until soft and slightly charred.

    Remove the aubergine from the grill and let it cool for a few minutes.
