METHOD
Step 1.
Slice the aubergine into thick circles of about 1 inch thick.Step 2.
Drizzle with olive oil, season with salt and pepper, and grill on a medium heat for about 15 minutes on each side until soft and slightly charred.Step 3.
Remove the aubergine from the grill and let it cool for a few minutes.Step 4.
Top each slice of aubergine with a dollop of cream, a sprinkle of pomegranate seeds, and a few pea shoots.Step 5.
Serve immediately.
