New York Style Bagels Recipe

METHOD

  • Step 1.

    In a large bowl, stir together the warm water, yeast, and sugar. Let stand about 5 minutes to dissolve yeast.
  • Step 2.

    Add bread flour, salt, and honey into the yeast mixture. Mix until dough pulls away from the sides of the bowl.
  • Step 3.

    Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
  • Step 4.

    Grease a large bowl and place the dough in the bowl, turning to coat. Cover with a damp cloth and allow it to rise in a warm place until doubled in size, usually takes about 1 hour.
  • Step 5.

    After it's doubled in size, punch down the dough and let it rest for another 10 minutes.
  • Step 6.

    Shape the dough into circles, then use your thumb to make a hole in the centre of each bagel and then gently twist the dough hoops so you get a spiral effect. Cover and let them rest for about 20 minutes.
  • Step 7.

    Preheat your oven to 220 degrees C. Fill a large pot half full with water, add white sugar and bring to a boil.
  • Step 8.

    After boiling, reduce the heat. Use a slotted spoon to gently lower bagels into the water. Boil as many as you can comfortably at a time. Boil for a minute on each side, then remove
  • Step 9.

    Transfer boiled bagels to a baking sheet, you can now scatter over sesame seeds if you want. Bake in the preheated oven for 15-20 minutes, until they're golden brown.
  • Step 10.

    Remove from oven and let cool before slicing and filling with your favourite ingredients.

  2. 10 gActive dry yeast

  3. 5 tbspWhite sugar

  4. 500 gBread flour

  5. 1.5 tspSalt

  6. 3 tbspHoney

  7. 75 gWhite sugar, for boiling water

  8. 50 gSesame seeds (optional)
