Grilled Avocado Stuffed with Tomato Salsa Recipe

METHOD

  • Step 1.

    Preheat your grill to a medium-high heat.
  • Step 2.

    Slice the avocados in half and remove the stone. Brush lightly with olive oil.
  • Step 3.

    Grill the avocado halves, cut side down, for about 2-3 minutes until char marks appear.
  • Step 4.

    Meanwhile, in a bowl, combine the chopped cherry tomatoes, diced green peppers, lime juice, and roughly chopped fresh coriander. Season with salt and pepper to taste.
  • Step 5.

    Once the avocados are grilled, remove from the heat. Allow them to cool slightly.
  • Step 6.

    Spoon the tomato mixture into the grilled avocado halves.
  • Step 7.

    Garnish with extra coriander leaves and serve immediately.
