METHOD
Step 1.
Preheat your grill to a medium-high heat.Step 2.
Slice the avocados in half and remove the stone. Brush lightly with olive oil.Step 3.
Grill the avocado halves, cut side down, for about 2-3 minutes until char marks appear.Step 4.
Meanwhile, in a bowl, combine the chopped cherry tomatoes, diced green peppers, lime juice, and roughly chopped fresh coriander. Season with salt and pepper to taste.Step 5.
Once the avocados are grilled, remove from the heat. Allow them to cool slightly.Step 6.
Spoon the tomato mixture into the grilled avocado halves.Step 7.
Garnish with extra coriander leaves and serve immediately.
