METHOD
Step 1.
Preheat your oven to 375°F (190°C).Step 2.
In a large bowl, combine the blackberries, sugar, cornstarch, and lemon juice. Stir until well combined and then set aside.Step 3.
Roll out half of your pie dough and lay it into a 9-inch pie dish.Step 4.
Pour the blackberry mixture into the pie crust, spread evenly.Step 5.
Roll out the remaining dough and place it over the top of the blackberries. Trim and crimp the edges, then cut a few slits in the top crust to allow steam to escape.Step 6.
Brush the top crust with a beaten egg and sprinkle with a little sugar.Step 7.
Bake in the preheated oven for about 1 hour, or until the crust is golden and the filling is bubbly.Step 8.
Allow the pie to cool and the filling to set before serving. Serve with vanilla ice-cream or custard and a few fresh blackberries on top.
