METHOD
Step 1.
Start by toasting the sesame seeds in a dry pan until golden, set aside.Step 2.
In the same pan, heat half of the oil over medium heat. Add the shallots and garlic, frying until they are crisp and golden. Using a slotted spoon, transfer them to a heat-proof bowl, leaving the oil in the pan.Step 3.
In the same pan, add the chilli flakes, Sichuan peppercorns, and star anise. Cook over low heat until fragrant, about 2 minutes. Remove from heat and discard the star anise.Step 4.
Combine the toasted sesame seeds, fried shallots, and garlic into the oil mixture. Stir in the soy sauce and the remaining oil.Step 5.
Let the mixture cool down completely before storing in an airtight container.
