METHOD

  • Step 1.

    Start by toasting the sesame seeds in a dry pan until golden, set aside.
  • Step 2.

    In the same pan, heat half of the oil over medium heat. Add the shallots and garlic, frying until they are crisp and golden. Using a slotted spoon, transfer them to a heat-proof bowl, leaving the oil in the pan.
  • Step 3.

    In the same pan, add the chilli flakes, Sichuan peppercorns, and star anise. Cook over low heat until fragrant, about 2 minutes. Remove from heat and discard the star anise.
  • Step 4.

    Combine the toasted sesame seeds, fried shallots, and garlic into the oil mixture. Stir in the soy sauce and the remaining oil.
  • Step 5.

    Let the mixture cool down completely before storing in an airtight container.
