Vanilla Loaf Cake Recipe

METHOD

  • Step 1.

    Preheat the oven to 180 degrees Celsius and line a loaf tin with baking paper.
  • Step 2.

    In a large bowl, cream together the butter and sugar until it's light and fluffy.
  • Step 3.

    Beat in the eggs one at a time, followed by the vanilla extract.
  • Step 4.

    In another bowl, mix together the self-raising flour and baking powder.
  • Step 5.

    Gradually add the dry mixture into the creamed mixture, alternating with the milk. Mix just until combined.
  • Step 6.

    Pour the batter into the prepared loaf tin and smooth the top.
  • Step 7.

    Bake for about 60 minutes or until a toothpick inserted into the centre comes out clean.
  • Step 8.

    Allow the cake to cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely.
