METHOD

  • Step 1.

    Begin by pitting the Kalamata olives if they are not already pitted. Roughly chop them to make blending easier.
  • Step 2.

    Peel the cloves of garlic. For a more subtle garlic flavour, blanch them briefly in boiling water for about a minute before chopping.
  • Step 3.

    In a food processor, combine the softened unsalted butter, chopped Kalamata olives, chopped garlic, lemon juice, and a pinch of salt. Blend until the mixture reaches a smooth consistency.
  • Step 4.

    Taste the olive butter and adjust the seasoning with extra salt or lemon juice if necessary.
  • Step 5.

    Transfer the olive butter mixture into a suitable container. It can be served immediately or stored in the refrigerator to firm up for a spreadable consistency.
  • Step 6.

    For longer storage, shape the butter into a roll using parchment paper and twist the ends to seal. The olive butter can be kept in the refrigerator for up to two weeks or frozen for future use.
