METHOD

  • Step 1.

    Begin by heating the olive oil in a large pan over medium heat.
  • Step 2.

    Add the chopped onions and sauté until soft and translucent, about 5 minutes.
  • Step 3.

    Stir in the minced garlic and cook for an additional minute until fragrant.
  • Step 4.

    Incorporate the cans of tomatoes, including the juice, into the pan. Use a wooden spoon to break the tomatoes into smaller pieces for a chunkier texture.
  • Step 5.

    Season the sauce with salt, black pepper, and sugar. Adjust according to your taste.
  • Step 6.

    Lower the heat and let the sauce simmer for 20 minutes, allowing the flavours to blend together.
  • Step 7.

    A few minutes before the end of cooking, add the fresh basil leaves and dried oregano, stirring well.

    For a richer flavour, you can also include a splash of red wine vinegar during the final minutes of simmering.
