METHOD
Step 1.
Begin by heating the olive oil in a large pan over medium heat.Step 2.
Add the chopped onions and sauté until soft and translucent, about 5 minutes.Step 3.
Stir in the minced garlic and cook for an additional minute until fragrant.Step 4.
Incorporate the cans of tomatoes, including the juice, into the pan. Use a wooden spoon to break the tomatoes into smaller pieces for a chunkier texture.Step 5.
Season the sauce with salt, black pepper, and sugar. Adjust according to your taste.Step 6.
Lower the heat and let the sauce simmer for 20 minutes, allowing the flavours to blend together.Step 7.
A few minutes before the end of cooking, add the fresh basil leaves and dried oregano, stirring well.Step 8.
For a richer flavour, you can also include a splash of red wine vinegar during the final minutes of simmering.Step 9.
Serve the sauce hot over your preferred pasta, garnished with additional basil leaves and grated Parmesan cheese if desired.
