METHOD

  • Step 1.

Wash the plums, remove the pits, and chop them into small pieces. You can leave the skins on for added colour and texture if preferred.
  • Step 2.

In a large pot, combine the chopped plums, granulated sugar, and lemon juice. Mix well to coat the plums.
  • Step 3.

Let the mixture sit for about 30 minutes to allow the sugar to dissolve and the flavours to meld.
  • Step 4.

Place the pot over medium-high heat and bring the plum mixture to a rapid boil.
  • Step 5.

Stir frequently and continue boiling for about 25/30 minutes, or until the jam thickens and reaches a temperature of 220°F (104°C).
  • Step 6.

Skim off any foam that forms on the surface during boiling.
  • Step 7.

Test the consistency of the jam by placing a small amount on a plate. It should set and wrinkle when pushed with a finger.
  • Step 8.

Once the jam is ready, remove the pot from the heat and let it cool for a few minutes.
  • Step 9.

Carefully ladle the hot jam into sterilised jars, leaving about 1/4 inch of headspace at the top. Seal the jars with sterilised lids and rings.
  • Step 10.

Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.
  • Step 11.

Next step is to remove the jars from the water bath and let them cool completely. As the jam cools, you'll hear a popping sound indicating that the jars are properly sealed.
  • Step 12.

Store the sealed jars in a cool, dark place. Once opened, keep the plum jam in the refrigerator.
  • Step 13.

Spread the delicious homemade plum jam on toast, scones, or use it as a topping for desserts.
