METHOD
Step 1.
Wash the plums, remove the pits, and chop them into small pieces. You can leave the skins on for added colour and texture if preferred.Step 2.
In a large pot, combine the chopped plums, granulated sugar, and lemon juice. Mix well to coat the plums.Step 3.
Let the mixture sit for about 30 minutes to allow the sugar to dissolve and the flavours to meld.Step 4.
Place the pot over medium-high heat and bring the plum mixture to a rapid boil.Step 5.
Stir frequently and continue boiling for about 25/30 minutes, or until the jam thickens and reaches a temperature of 220°F (104°C).Step 6.
Skim off any foam that forms on the surface during boiling.Step 7.
Test the consistency of the jam by placing a small amount on a plate. It should set and wrinkle when pushed with a finger.Step 8.
Once the jam is ready, remove the pot from the heat and let it cool for a few minutes.Step 9.
Carefully ladle the hot jam into sterilised jars, leaving about 1/4 inch of headspace at the top. Seal the jars with sterilised lids and rings.Step 10.
Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.Step 11.
Next step is to remove the jars from the water bath and let them cool completely. As the jam cools, you'll hear a popping sound indicating that the jars are properly sealed.Step 12.
Store the sealed jars in a cool, dark place. Once opened, keep the plum jam in the refrigerator.Step 13.
