Lemon Cupcakes with Zesty Buttercream Frosting Recipe

METHOD
Step 1.
Preheat your oven to 180°C (350°F) and line a cupcake tray with paper liners.Step 2.
In a mixing bowl, cream together 175g of unsalted butter with 175g of caster sugar until pale and fluffy.Step 3.
Gradually add 3 large eggs, one at a time, beating well after each addition.Step 4.
Fold in 175g of self-raising flour, half a teaspoon of baking powder, and the zest of 1 lemon gently until the mixture is smooth.Step 5.
Spoon the batter into the prepared cupcake tray, filling each liner two-thirds full.Step 6.
Bake in the preheated oven for about 20–25 minutes until risen, golden, and a toothpick inserted into the center comes out clean.Step 7.
Allow the cupcakes to cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.Step 8.
For the frosting, beat 150g of unsalted butter until soft and creamy.Step 9.
Gradually beat in 300g of icing sugar and the juice of 1 lemon until smooth and fluffy.Step 10.
Once the cupcakes are completely cool, pipe or spread the buttercream frosting onto each cupcake.Step 11.
Garnish with lemon zest or thin lemon slices before serving.
