Lemon Cupcakes with Zesty Buttercream Frosting Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C (350°F) and line a cupcake tray with paper liners.
  • Step 2.

    In a mixing bowl, cream together 175g of unsalted butter with 175g of caster sugar until pale and fluffy.
  • Step 3.

    Gradually add 3 large eggs, one at a time, beating well after each addition.
  • Step 4.

    Fold in 175g of self-raising flour, half a teaspoon of baking powder, and the zest of 1 lemon gently until the mixture is smooth.
  • Step 5.

    Spoon the batter into the prepared cupcake tray, filling each liner two-thirds full.
  • Step 6.

    Bake in the preheated oven for about 20–25 minutes until risen, golden, and a toothpick inserted into the center comes out clean.
  • Step 7.

    Allow the cupcakes to cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
  • Step 8.

    For the frosting, beat 150g of unsalted butter until soft and creamy.
  • Step 9.

    Gradually beat in 300g of icing sugar and the juice of 1 lemon until smooth and fluffy.
  • Step 10.

    Once the cupcakes are completely cool, pipe or spread the buttercream frosting onto each cupcake.
  • Step 11.

    Garnish with lemon zest or thin lemon slices before serving.
