Luscious Lemon and Poppy Seed Drizzle Loaf Recipe

METHOD
Step 1.
Preheat your oven to 180°C (160°C fan) and grease a loaf tin with a bit of butter.Step 2.
In a large mixing bowl, cream together 180g of caster sugar with 140g of unsalted butter until light and fluffy.Step 3.
Beat in 2 large eggs, one at a time, making sure each is well integrated.Step 4.
Fold in 180g of self-raising flour, 1 tsp of baking powder, and 2 tbsp of milk to the mixture gently until combined.Step 5.
Stir in the zest of 1 lemon and 2 tbsp of poppy seeds.Step 6.
Pour the mixture into the prepared loaf tin and smooth the top with a spoon.Step 7.
Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the centre comes out clean.Step 8.
For the drizzle, mix together the juice of 1½ lemons with 85g of icing sugar.Step 9.
Poke holes in the warm cake with a skewer and pour over the drizzle, allowing it to sink in.Step 10.
Let the cake cool in the tin before turning out onto a wire rack to cool completely.Step 11.
