METHOD
Step 1.
Preheat your oven to 180°C (356°F).Step 2.
Roll out the pastry on a floured surface and line a 9-inch quiche dish. Prick the base with a fork, and bake blind for 20 minutes.Step 3.
In a saucepan, blanch the Brussels sprouts and cauliflower florets for 4 minutes, then drain.Step 4.
In a frying pan, gently sauté the chopped onion in butter until transparent.Step 5.
In a large bowl, beat the eggs and mix in the heavy cream, grated cheese, nutmeg, salt, and pepper.Step 6.
Arrange the Brussels sprouts, cauliflower, and sautéed onion over the pre-baked pastry base.Step 7.
Pour the egg and cheese mixture over the vegetables.Step 8.
Bake for 40-45 minutes or until the filling is set and the top is golden brown.Step 9.
Allow to cool slightly before serving.
