METHOD

  • Step 1.

    Preheat your oven to 180°C (356°F).
  • Step 2.

    Roll out the pastry on a floured surface and line a 9-inch quiche dish. Prick the base with a fork, and bake blind for 20 minutes.
  • Step 3.

    In a saucepan, blanch the Brussels sprouts and cauliflower florets for 4 minutes, then drain.
  • Step 4.

    In a frying pan, gently sauté the chopped onion in butter until transparent.
  • Step 5.

    In a large bowl, beat the eggs and mix in the heavy cream, grated cheese, nutmeg, salt, and pepper.
  • Step 6.

    Arrange the Brussels sprouts, cauliflower, and sautéed onion over the pre-baked pastry base.
  • Step 7.

    Pour the egg and cheese mixture over the vegetables.
  • Step 8.

    Bake for 40-45 minutes or until the filling is set and the top is golden brown.
  • Step 9.

    Allow to cool slightly before serving.
