METHOD
Step 1.
Prepare the pastry: Mix flour and salt together, then add butter until mixture looks like coarse crumbs. Add water a spoon at a time until pastry forms a ball. Wrap in clingfilm and chill for at least an hour.Step 2.
Preheat the oven to 200°C and lightly grease a tart pan.Step 3.
On a lightly floured surface, roll out the pastry and cut to fit your tart pans. Press gently into the pans.Step 4.
Prepare the filling: Mix the apples, sugars, spices, and lemon juice, then evenly distribute among the tart shells.Step 5.
Roll out the remaining pastry and cut into lattice strips. Arrange on top of the apple mixture.Step 6.
Bake tarts in the preheated oven for 20-25 minutes or until lattice tops are golden brown.Step 7.
Cool on a wire rack before serving with a squirt of whipped cream and a sprinkle of icing sugar.
