Mixed Berry Ice Lollies Recipe

METHOD
Step 1.
Begin by washing your berries thoroughly and patting them dry.Step 2.
In a blender, combine the mixed berries, honey, and lemon juice. Blend until you achieve a smooth consistency. If you prefer bits of fruit in your lollies, pulse the blender a few times to leave chunkier pieces.Step 3.
Taste the mixture and adjust the sweetness if necessary. Depending on the ripeness of your berries, you may need to add a bit more honey.Step 4.
Pour the mixture into ice lolly moulds, leaving a small space at the top for the mixture to expand as it freezes.Step 5.
Insert sticks into each mould. If using a mould that doesn't hold the sticks upright, freeze your lollies for about an hour until partially frozen, then insert the sticks.Step 6.
Freeze the ice lollies for at least 4 hours, or until completely firm.Step 7.
To release the ice lollies from their moulds, run warm water over the outside of the moulds for a few seconds.Step 8.
Enjoy your homemade mixed berry ice lollies immediately, or wrap them in wax paper and store in the freezer for up to 2 weeks.
