Mixed Berry Ice Lollies Recipe

METHOD

  • Step 1.

    Begin by washing your berries thoroughly and patting them dry.
  • Step 2.

    In a blender, combine the mixed berries, honey, and lemon juice. Blend until you achieve a smooth consistency. If you prefer bits of fruit in your lollies, pulse the blender a few times to leave chunkier pieces.
  • Step 3.

    Taste the mixture and adjust the sweetness if necessary. Depending on the ripeness of your berries, you may need to add a bit more honey.
  • Step 4.

    Pour the mixture into ice lolly moulds, leaving a small space at the top for the mixture to expand as it freezes.
  • Step 5.

    Insert sticks into each mould. If using a mould that doesn't hold the sticks upright, freeze your lollies for about an hour until partially frozen, then insert the sticks.
  • Step 6.

    Freeze the ice lollies for at least 4 hours, or until completely firm.
  • Step 7.

    To release the ice lollies from their moulds, run warm water over the outside of the moulds for a few seconds.
  • Step 8.

    Enjoy your homemade mixed berry ice lollies immediately, or wrap them in wax paper and store in the freezer for up to 2 weeks.
