
Pistachio Basil Pesto & Lemon Pasta Recipe

METHOD
- Step 1.Bring a large pot of salted water to a boil. Add the pasta and cooking according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
- Step 2.While the pasta is cooking, make the pesto. In a food processor, combine the basil leaves, pistachios, garlic, lemon zest, and salt. Process until finely chopped.
- Step 3.With the food processor running, slowly drizzle in the olive oil until the pesto is smooth. Add the parmesan cheese and pulse until combined.
- Step 4.In a large bowl, toss the cooked pasta with the pesto, adding reserved pasta water as needed to create a creamy sauce.
- Step 5.Finish off the pasta with a squeeze of fresh lemon juice and a basil leaf or two and serve immediately.
