METHOD
Step 1.
Bring a large pot of salted water to a boil. Add the pasta and cooking according to package instructions until al dente. Drain, reserving 1 cup of pasta water.Step 2.
While the pasta is cooking, make the pesto. In a food processor, combine the basil leaves, pistachios, garlic, lemon zest, and salt. Process until finely chopped.Step 3.
With the food processor running, slowly drizzle in the olive oil until the pesto is smooth. Add the parmesan cheese and pulse until combined.Step 4.
In a large bowl, toss the cooked pasta with the pesto, adding reserved pasta water as needed to create a creamy sauce.Step 5.
Finish off the pasta with a squeeze of fresh lemon juice and a basil leaf or two and serve immediately.

50 gParmesan cheese, grated
2 tbspLemon juice
