Pistachio Basil Pesto & Lemon Pasta Recipe

METHOD

  • Step 1.

    Bring a large pot of salted water to a boil. Add the pasta and cooking according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  • Step 2.

    While the pasta is cooking, make the pesto. In a food processor, combine the basil leaves, pistachios, garlic, lemon zest, and salt. Process until finely chopped.
  • Step 3.

    With the food processor running, slowly drizzle in the olive oil until the pesto is smooth. Add the parmesan cheese and pulse until combined.
  • Step 4.

    In a large bowl, toss the cooked pasta with the pesto, adding reserved pasta water as needed to create a creamy sauce.
  • Step 5.

    Finish off the pasta with a squeeze of fresh lemon juice and a basil leaf or two and serve immediately.

  3. 100 gPistachios

  4. 2 Garlic cloves

  5. 1 tbspLemon zest

  6. 1 tspSalt

  7. 125 mlExtra virgin olive oil

  8. 50 gParmesan cheese, grated

  9. 2 tbspLemon juice

  10. 2 Basil Leaves, for garnish
