METHOD

  • Step 1.

    Begin by cutting the cantaloupe melon in half, remove the seeds and scoop out the flesh.
  • Step 2.

    Place the melon pieces into a blender and add lime juice, blending until the mixture is smooth.
  • Step 3.

    Pour the blended melon into a mixing bowl and stir in the sugar until it's completely dissolved.
  • Step 4.

    Chill the mixture in the refrigerator for about 1 hour.
  • Step 5.

    After chilling, pour the mixture into the bowl of an ice cream maker and churn according to the manufacturer's instructions, usually about 20–25 minutes.

    If you do not have an ice cream maker, you can pour the mixture into a shallow dish and freeze. Stir every 30 minutes until it's evenly frozen, about 3–4 hours.

    Transfer the sorbet into a freezer-proof container and freeze until firm, at least 2 hours or preferably overnight.
